Flourless Chocolate and Orange Cake

Ingredients
  • 2 small thin-skinned oranges, approx. 375g total weight (or 1 large)
  • 6 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 200 g ground almonds
  • 250 g caster sugar
  • 50 g cocoa
  • orange peel, for decoration

Method
Put the whole orange or oranges in a pan with some cold water, bring to the boil and cook for 2 hours or until soft.

Drain, and when cool, cut the oranges in half and remove any big pips.

Then pulp everything - pith, peel and all - in a food processor.

Preheat the oven to gas mark 4/180°C Butter and line a 20cm springform tin.

Add the eggs, baking powder, bicarbonate of soda, almonds, sugar and cocoa to the orange in the food processor. Run the motor until you have a cohesive cake mixture, but slightly knobbly with the flecks of puréed orange.
Pour and scrape into the cake tin and bake for an hour, by which time a cake tester should come out pretty well clean. Check after 45 minutes because you may have to cover with foil to prevent the cake burning before it is cooked through, or indeed it may need a little less than an hour; it all depends on your oven.

Leave the cake to get cool in the tin, on a cooling rack. When the cake is cold you can take it out of the tin. Decorate with strips of orange peel or coarsely grated zest if you so wish, but it is darkly beautiful in its plain, unadorned state.

Salad Dressings

Salad dressing

All dressings can be made in advance in a jam jar to be stored for easy use, unless otherwise instructed.

Picture
French dressing:
combine Peeled and finely chop ¼ of a clove of garlic, 1 teaspoon of Dijon mustard, 2 tablespoons of white or red wine vinegar and 6 tablespoons of extra virgin olive oil with a pinch of sea salt and freshly ground black pepper.

Yoghurt dressing:
Combine 1/3 cup of natural yoghurt, 2 tablespoons of white or red wine vinegar and 1 tablespoon of extra virgin olive oil into a jam jar with a pinch of sea salt and freshly ground black pepper.

Lemon dressing


Combine 6 tablespoons of extra virgin olive oil with a pinch of sea salt and freshly ground black pepper, Squeeze in the juice of 1 lemon.

Balsamic dressing


Combine 6 tablespoons of extra virgin olive oil and 2 tablespoons of balsamic vinegar into a jam jar with a pinch of sea salt and freshly ground black pepper.

Spicy Honey-Mustard

Whisk 2 teaspoons each honey and dijon mustard, 2 tablespoons lime juice, and 1/2 teaspoon each lime zest and kosher salt. Gradually whisk in 1/4 cup each olive oil and vegetable oil, and then add 2 teaspoons chopped thyme and 1/2 minced jalapeno.

Mango-Lime Puree

1 chopped peeled mango, the zest and juice of 1 lime, and 1 teaspoon each dijon mustard, sugar and kosher salt in a blender. Gradually blend in 1/4 cup rice vinegar and 1/2 cup vegetable oil.

Italian Soak 2 tablespoons minced red onion in cold water for 15 minutes; drain. Pile 1/2 garlic clove, 2 tablespoons fresh parsley, 1 teaspoon dried oregano and 1/2 teaspoon kosher salt on aboard; chop and mash into a paste. Whisk with 2 tablespoons red wine vinegar and the onion. Gradually whisk in 1/2 cup olive oil.


Basil-Walnut

Blend 3/4 cup olive oil, 3 tablespoons each toasted walnuts and lemon juice, 1 cup fresh basil, 1 garlic clove and 1 teaspoon kosher salt in a blender.

Hazelnut-Herb

Blend 2 tablespoons each dijon mustard and cider vinegar, 1 teaspoon kosher salt, and 1/3 cup each vegetable oil and hazelnut oil in a blender. Add 1/4 cup each chopped chives and dill and pulse to combine.

Roasted Red Pepper

Make Lemon Dressing in a blender, adding 1 cup jarred roasted red pepper strips and 1 teaspoon minced rosemary.


Orange-Walnut

Whisk 2 tablespoons orange juice, 1 tablespoon sherry vinegar, 1/2 teaspoon kosher salt, and pepper to taste. Gradually whisk in 3 tablespoons each walnut oil and olive oil.


Asian Sesame

Whisk 2 tablespoons cider vinegar, 1/2 tablespoon brown sugar, 1 1/2 teaspoons grated peeled ginger, 3 tablespoons sesame oil, 1/3 cup vegetable oil, 1/2 teaspoon kosher salt, and pepper to taste.


Miso-Ginger

Blend 1 tablespoon each miso paste and grated peeled ginger, the juice of 2 limes, 1/2 garlic clove, 1 chopped scallion, 1 teaspoon Sriracha and 1/2 teaspoon sugar in a blender. Gradually blend in 1/2 cup vegetable oil.


Avocado-Wasabi

 Puree half an avocado, 1 1/2 teaspoons wasabi paste, 3 tablespoons each rice vinegar and water, and 1/2 teaspoon kosher salt in a blender. Gradually blend in 1/4 cup vegetable oil.

Spicy Thai

Whisk 1/4 cup lime juice, 1 tablespoon fish sauce, 1 teaspoon sugar, 1/2 teaspoon Sriracha and 1/4 teaspoon kosher salt. Whisk in 1/4 cup vegetable oil.

Lemon Turmeric and honey tea
Drinking 2 L of water daily will help clean the skin.

Adding ½ a fresh lemon to your water can speed up the cleansing process and make water taste more refreshing.
A great anti-inflammatory for irritated skin and coughs and colds.

  • 1 cup of hot water
  • Juice of half a lemon
  • 1/2 tsp of turmeric powder or freshly grated root
  • 1 tsp of honey

Method
Combine all ingredients into your cup and steep for 5 minutes.

Slippery Elm Smoothie

A naturopathic gut repair smoothie.

Ingredients
  • 1 large ripe banana, chopped
  • 1 tbl spoon of slippery elm
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 125 ml almond milk,
  • 1 heaped teaspoon cocoa or cacao powder
  • 1 teaspoon coconut oil
  • 1 teaspoon honey or 1 fresh pitted date
Method
Combine ingredients and drink immediately once a day.

Cardamom Tea

Cardamom tea

A lovely winter warmer, or lightly spiced bed time milk.

Ingredients
  • 5 green cardamom pods – lightly crushed.
  • 1 cup of milk (your choice)
  • 1 tsp cinnamon
  • 1 tsp honey

Method
Place all ingredients into a saucepan and gently heat, DO NOT boil.
Once the fragrant cardamom smell is obvious pour into tea cups and stir well.

The Hulk Green Smoothie

Here is a fun super hero way of getting your kids to enjoy their greens!
Let’s be honest…..Feeding yourself and your kids healthy food is not an easy task and it takes a lot of hard work and effort to bypass most of the processed food and junk in supermarkets these days.

Ingredients
  • 100g natural thick yoghurt with live cultures
  • 1/2 cup milk (your choice of organic dairy, soy, rice, almond, coconut)
  • 1 teaspoon honey
  • 1 handful baby spinach leaves (see note)
  • 1 banana
  • 1 teaspoon ground flaxseed (linseed) or whole chia seed
  • ½ cup ice
Method
Combine the yoghurt, milk, honey, spinach, banana, flaxseed and ice into a blender.
Blend until smooth, green and creamy. I like to use my Vitamix.
Serve immediately and enjoy.

Summer Berry Iced Tea

Ingredients
  • 6 cups water
  • 1 cup Summer Berry Tea
  • 1/3 cup honey
  • teaspoon - tablespoon of grated ginger

Method
Directions Bring water to a boil in a medium saucepan. Add Summer Berry Tea & ginger.

Remove from heat, and let stand for 1 hour. Strain through a sieve; discard flowers.

Stir in honey. Refrigerate for at least 1 hour.

Note

Tea can be refrigerated for up to 4 days.

Bone Broth

Bone Broths

Making large quantities of this broth can be a great idea if you suffer from long term skin issues. The herbs and digestible proteins are great for the general health of the skin and the broken down bone is full of essential nutrients that rebuild skin tissues and reduce inflammation in the skin.

Ingredients
  • Whole chicken (organic)
  • 1tbs Apple cider vinegar 
  • Water (to cover chook)
  • 1 each of: carrot, celery, onion chopped
  • 1 tsp each of: ginger, garlic, parsley, turmeric

Method
In a slow cooker or large pot place a whole organic chicken (or lamb shank, osso bucco). Add  vegetables and herbs – these are antifungal, antimicrobial herbs.

Cover with water and 1 tablespoon of apple cider vinegar  and simmer for 6-24 hours. The longer you simmer, the stronger the breakdown of the bone nutrients.

Strain off and keep the liquid and keep this in a container as your broth. You will also be able to scrape off the flesh of the meat if you like to add some protein and a make a more filling soup.

Options
Use this for soups, stews or freeze in batches for later use.
A specific dose for skin health is ½ cup of the broth daily as a warm drink or as part of a meal.

Coconut Broth

Coconut Soup

A very fresh and rich broth with all your favorite Asian flavors. This Soup is the perfect start or finish to a Spring detox which will boost your circulation, energy and appetite

Ingredients
  • 1 tin of coconut milk + equal amounts of water
  • 2 tbsp of sweet chili sauce
  • 1 tbsp Tamari or Soya sauce.
  • 2 clove garlic
  • 1 thumb knob of ginger finely sliced or grated
  • 1 red chili
  • 4 mushrooms
  • 1 bunch of broccoli
  • 1 Bok Choy
To serve
  • 1 small bunch of coriander
  • 1 lemon

Method

Combine all ingredients in a pan and heat to just before boiling, simmer for 5 minutes. You want the greens to be soft, but slightly crunchy.

Remove from heat and serve with fresh coriander and the lemon juice.

** Varianations: add any protein such as tofu or chicken or prawns if you wish.

Add more or less ginger chili and garlic to taste

Immune Soup

Immune Soup

Ingredients
  • 8 cups (237 ml) water
  • 1 tablespoon (15 ml) olive oil
  • 1 onion, diced
  • 1 bulb garlic (at least 10 cloves), minced
  • One 1 1⁄2 inch (3 1⁄2 cm) piece of fresh ginger root grated
  • 1 1⁄2 cups salted chicken soup stock (see recipe below) or vegetable stock or herbamare
  • 2 cups fresh, sliced shiitake mushrooms
  • 1 large reishi mushroom
  • Miso - available at Asian groceries (optional if you cant find it don’t worry)
  • Fresh chilli, turmeric, Sage, thyme, oregano

Method
Bring water to boil in large pot. Heat olive oil, sauté garlic, onions, chilli and ginger until soft and aromatic. Add contents of skillet to water. Add stock, shiitake, astragalus, and reishi. Simmer covered for two hours. Remove from heat, allow to sit for two more hours. Remove  reishi mushrooms. Reheat. Add other herbs to taste. Then add the
miso.
